Caul Fat (frozen) 500g

Otherwise known as lace fat, fat netting, omental fat, or in France, crépine. From pigs, it is the thin lacy membrane which surrounds the internal organs.

Inspiration: Caul fat's unique construction makes it ideal to use for sausages, pâtés, roulades and crépinettes.
